I discovered this place by pure chance: at dinner with friends, a couple of guests brought a tray of gluten-free mignon because they suspected they were celiac. So far, so normal: the fact is that, tasting them, I would never have said they were gluten-free, because I can guarantee you that in taste and texture they were absolutely indistinguishable; they had to tell me, and even after they told me, I struggled to believe it. Usually, gluten-free doughs, of any kind, are immediately recognizable, being more crumbly, fragile, and grainy than 'normal' ones. These were not, in the slightest; that's why I say I found it hard to believe they were gluten-free, and this applies to both sweets and savory doughs, like pizza and various focaccias that I had the opportunity to taste (in this regard, it’s interesting how they sometimes offer slices of freshly baked pizza with the obvious intent of convincing skeptics, which seems very smart of them). My wife is celiac, so you can well imagine that for her, a place like this is a real wonderland, in every sense. It’s not exactly inexpensive, I must say, but when my wife wants to indulge, or when I want to treat her by tempting her taste buds, I always know where to go: to Celiachiamo!
