Everything that is gluten-free is actually made in the same kitchen where gluten items are prepared, so there is a risk. I give 3 stars only because we were told that if you want something gluten-free, you need to inform them 2 days in advance to ensure safety, so going there on the spot to find something doesn't make sense.

Pure show!! They are not part of the Aic circuit as they do not have separate kitchens. However, they pay great attention during the preparation of... brioche col tuppo, croissants, arancini, and cannoli all gluten-free! Everything is filled with their pistachio, chocolate, pastry cream, or ricotta creams! And everything is made by them and not from external laboratories or packaged. My wife was absolutely thrilled. They even put a candle on the croissant since it was her birthday. Absolutely recommended! And the line in front of the pastry shop every morning speaks for itself!

For those who, even if celiac or simply gluten intolerant, want to enjoy an excellent cannoli in the historic center. The cannoli is just slightly smaller than the 'normal' one, but crispy and with a very good filling: the ricotta is creamy and not too sweet, enriched with pistachio crumbs. They also have gluten-free croissants and brioche. After the first time I returned and tried the Arancine, also gluten-free: classic with ragù, with eggplants and pistachios, and with pecorino and pepper, all three versions very good, the coating flavorful and crispy, and fried to perfection, not greasy at all. I definitely recommend a visit to Artale, both for those with gluten issues and for those without!
